Stomach Pain, Achy Joints? Lyme Disease or Food Allergies?

Joint pain?  Achy? Tired? Stomach pain?  That’s me all over for the last month, mixed with a little depression to keep things interesting!

I was sure I had Lyme Disease.  The symptoms fit.  Or mold exposure.  Maybe cancer. But food allergies?  hmmmm..

The book explores the relationship between what we eat and how we think and feel.

Sounds simplistic, BUT when someone repeatedly eats an allergen, like GLUTEN, it wears away the lining of their stomach and intestines leaving gaps through which food is absorbed only partially digested.

The immune system kicks in to attack these harmful substances causing swelling, joint pain, etc.

The solution?  Chicken soup.  What?!  True! Who knew?!

I’ve been eating it for the last week and I’M BETTER! Not healed yet, but so much better!

Salad 101

I love salad!  Here’s how I make mine:

First, I assemble the ingredients. Today it’s organic turkey breast, lime, grapefruit (not shown), kale, celery, garlic, celery and avocado.


Then I get out a BIG bowl. I eat a HUGE salad.  It all breaks down to nothing in your tummy, so you can pig out on salads.


Next, I make the dressing in the bottom of the bowl. Today I mashed up an avocado, squeezed in 1/2 each grapefruit/lime. Sprinkled in some red pepper flakes and sea salt. Whipped it up till creamy with a wire whisk. I could have added just a tad of real maple syrup, too. That would have been good, but I forgot =/


I make my own croutons by toasting a slice of Ezekiel Bread…


I butter it (real butter. Margarine is 4-letter word here at Skinnyandfit!) Then I rub it all over with a garlic clove and sprinkle with sea salt.


I chop it up into cubes, and – voila’- homemade croutons, minus preservatives and artificial ingredients. Yum!

Hope you’re not getting bored.  There’s just a few more steps….

I tear the greens into smaller pieces and toss into bowl (kale, in this case) , stir to coat with dressing.


Then I chop up the veggies and meat (if I’m having meat. Most times, I don’t)….


Toss it all together, and bon appetit!

I try to eat salad for lunch every day.

Yummy Basil Salad Dressing

Kale Salad with Basil Dressing

This is a yummy salad!  Kale, leftover garlic-roasted potatoes (sweet and regular), shredded carrots, crushed up blue chips, and avocado.  Not bad.  But, the best part is the dressing:

  • 2 T. extra virgin olive oil
  • fresh lemon juice to taste. I used about 1/2 a lemon or less.
  • 1 garlic clove, crushed
  • Dried Basil, to taste.  Or chopped/torn up fresh.  If I had used fresh I would have just added it to the salad greens, not necessarily stirred it into the dressing, but the flavor will still be there.
  • a dab of real maple syrup (not maple flavored, but the good stuff that tastes caramel-y)
  • sea salt and pepper to taste.

Beat ingredients in bottom of salad bowl till creamy.  Add your salad, stir and eat — YUM!

Green Hummus!

Ok, ok, this is a TERRIBLE picture, I know, but it’s absolutely WONDERFUL hummus.  Sorry, I’m not one of those professional bloggers, just a nice blogger with a cheap cell phone camera — sue me.  BUT, before you do, enjoy this recipe for Green Hummus, just in time for St. Patrick’s Day!  Note: it really IS green.  My cell phone camera is color-blind!

Where’s the green come from?  Avocados!

Here’s the skinny on how to make it, pun intended:

1 1/2 Avocados

2 cans of garbanzo beans or 4 cups of your own.

2 garlic cloves

Herbs from the garden or whatever you want from your spice cabinet, I put used Thyme, Rosemary, and Chives.

The juice from a fresh lemon, or vinegar.

About 3/4 C. chicken broth, or broth from your boiled garbanzo beans, or both.

Sea salt to taste and a little pepper, maybe some hot pepper flakes if you’re feeling spicy.

Mix it all together in a food processor and yum!
