Gluten-free Monster Cookies

I took these to my RPM class the other day, and they were a big hit.  Almond meal and rice flours make them gluten free.  Hone, applesauce, raisins and chocolate chips (Ghirardelli, of course 🙂 ) make them yummy!

Gluten-free Monster Cookies

½ C. butter ½ C. applesauce
½ C. honey (I prefer raw)* 2 eggs,  1 egg white
1t. vanilla 1C. almond meal flour
1C. white rice flour ½ t. salt
1t. baking soda 1T. ground cinnamon
3C. rolled oats 10 oz. bag Ghirardelli 60% choco. Chips
½ C. walnuts or pecans 1/2 C. raisins (I use organic)

 

Melt butter on low heat.  If using raw honey, stir it in to warm butter to melt.  Meanwhile, beat eggs, applesauce and vanilla together in big mixing bowl or Kitchen Aid.

Mix in baking soda and salt.  Stir in melted butter and honey and rest of flour.

Remove from mixer. Stir in oats, chips, raisins and nuts.

Let sit for 10 minutes before dropping by teaspoonfuls onto baking sheets.  Bake 350, 13 min.

You can add ½ C. peanut butter for a tasty option.
